What type of wood is best for a wood fired BBQ?

Hardwoods such as oak, beech, ash and cherry are ideal for outdoor cooking, and kiln dried is the best option: lower moisture content means the wood burns hotter, cleaner and more efficiently than unseasoned timber. Avoid softwoods such as pine, or any treated or painted timber, as these produce excess smoke, can affect the taste of food and should never be burned in a cooking context.

Are wood fired BBQs harder to use than gas?

They require more involvement: you'll need to light and manage the fire, wait for it to reach the right temperature and work with natural heat zones rather than precise controls.
